Are you ready for the golden season? Issue #04/2013

Actually, you do have to live somewhere in Europe to get an idea why they call autumn the golden season, but I will simply assume most of you do or at least have been to Europe :)

I wanted to share with you guys the latest update of what I’ve been styling and shooting in the summer months.

And here is the recipe in case you feel like crafting the apple’n'blackberry pie above. Trust me, it is VERY yummy!

200 g flour
100 g butter
6 tsp sugar
1 tsp of starch
1/4 tsp salt
4-5 tsp ice water
2-3 apples
1/2 cup blackberries

In a large bowl, mix the flour, salt, starch and 4 tablespoons of sugar. Add butter. Knead the dough by hand. (All that can be done in a food processor btw.)
Slowly, tablespoon by tablespoon, add water, stir until a ball of dough begins to form. Do not overstir, otherwise the dough will get too stiff. If the dough is too crumbly, add some water. If too sticky, pour in some flour. The dough should be soft and elastic.
Put the dough into the frige for an hour. Roll out thinly and put apples and blackberries on it, leaving the edges free. Sprinkle with remaining sugar and bake for about 35-40 minutes at 180C / 350F.

    on the apple blackberry pie, do you fold the edges over the fruit before you bake it? And do you bake this in a pie tin?
